You don’t have to give up flavor when you are looking for bariatric friendly recipes. One of the best tips for eating after weight loss surgery, is finding recipes with flavor, but not a lot of calories from added sugars. While we do have some carbs in this recipe, there aren’t many and if you stick to your bariatric portion size that was recommended from your doctor, this is a great option for meal prep or a family meal.

Ingredients
1/2 C Frozen Corn
1 Can Black Bean – Drained
1 1/2 C Salsa – Divided (Make sure it’s no sugar added)
1/2 t Cumin
1 t Minced Garlic
2 Small Boneless Chicken Breast – Cut in Half
Salt & Pepper
Directions
Mix corn, beans, 1 C salsa, cumin and garlic together.
Spray a loaf pan with non-stick spray.
Cover dish with mixture.
Salt and pepper chicken and lay on top of mixture.
Top with remaining salsa.
Bake at 350° for 30 minutes.
