INGREDIENTS:

* 10 chicken thighs trimmed and cleaned.
* 2 tsp curry powder (1 tsp for marinade and 1 tsp for stew)
* 1 lime
* 6 shallots sliced thinly
* 6 leaves sage
* 1 tsp rosemary chopped
* 1/2 tsp thyme chopped
* 1 tbsp garlic paste
* 1/2 tsp smoked paprika
* 1 tsp Crushed black pepper (1/2 for marinade & 1/2 for stew)
* 1 tsp salt, or to your taste
* 1 chicken bouillon cube
* 1 tbsp olive oil

REST OF INGREDIENTS FOR STEW:

* 1 tbsp ghee to sear chicken
* 2 large onions thinly sliced or chopped
* 1 cup white mushrooms (thinly sliced)
* 1 cup chicken broth
* 1/2 cup coconut milk
* Chopped parsley for garnish (optional)
* Chopped red bell peppers for garnish (optional)
