Cauliflower Potato Salad
1 head organic cauliflower, cut into bite size pieces
3 pastured eggs
6 – 8 slices of bacon,
1 tsp apple cider vinegar
1 to 1 ½ cups of avocado mayonnaise, I used Sir Kensington’s
1 Tbsp. dijon mustard
½ yellow onion, super fine dice
2 organic stalks, super fine dice
1 radish, super fine dice
3 green onions, chopped
Handful of organic parsley, chopped

Place the eggs in a saucepan and fill with cold water until the eggs are covered by about 1 inch of water or more.

Place the pan on the stove over high heat. When the water comes to a boil for 30 seconds, turn off the heat and cover the pot with a lid. Set the timer for 17 minutes.

When the timer is done, drain the water and add cold water to the pan and wait a few minutes until the pan of water warms up. Drain again and fill with cold water again only this time add a bunch of ice cubes to really cool the eggs.

Once the eggs have completely cooled down, say after 30 minutes, peel, rinse, and cut up the eggs into chunks and place in a large mixing bowl.

When the bacon is done, place it on a paper towel covered plate to drain. Chop the bacon into small pieces and set aside.

Place the florets into a steamer and steam until fork tender but not mushy. Drain and rinse in cold water and drain again. Place the cauliflower into your large mixing bowl with the eggs.

Add the chopped radish, green onion, yellow onion, celery, parsley and stir to combine. Add the mayonnaise starting with 1 cup, along with the mustard and apple cider vinegar and stir to combine.

If needed, add more mayo until you get the consistency you like. Add salt and pepper and bacon and stir once more. Taste and adjust seasonings as needed. Enjoy this dish in place of regular potato salad for a low carb alternative.
