Cheesy Pork Sausage Flatbreads

    Are you the type of person who only goes to baseball games for that huge Italian hoagie stuffed with sausage, peppers, and cheese? We’re with you! This week, our chefs took the beloved dish from stadium fare to stellar weeknight dinner with a few delicious twists. First, they dropped the hoagie and replaced it with golden, crispy flatbread. They then spread with a rich tomato sauce and topped with sweet roasted pepper slices and savory sausage. Finally, they topped it with 2 different kinds of cheese. Yep, it’s safe to say this dish is a home run.

    Adjust rack to top position and preheat oven to 450 degrees. Wash and dry all produce. Halve, peel, and slice onion into ½-inch-thick wedges. Slice top off green pepper; remove and discard core and seeds, then cut into ½-inch-thick rounds.

    Toss onion and green pepper on a lightly oiled baking sheet; season with salt and pepper. Add sausage to sheet. Roast on top rack, flipping halfway through, until veggies are tender and sausage is cooked through, about 15 minutes.

    Meanwhile, add ¼ cup water and 2 TBSP butter (⅓ cup water and 3 TBSP butter for 4 servings) to a medium microwave-safe bowl. Microwave on high until water is hot and butter is melted, about 1 minute. Stir in tomato paste until smooth. Season with salt and pepper.

    Once veggies and sausage have roasted 15 minutes, remove from baking sheet. Slice sausage into ½-inch-thick pieces on a diagonal. Place flatbreads on same sheet. (For 4 servings, you may need to use 2 sheets.) Toast on top rack of oven until golden, about 3 minutes.

    Once flatbreads are toasted, remove from oven and heat broiler to high (or oven to 500 degrees). Evenly spread with sauce, then top with cheeses, sausage, and veggies. Season with salt and pepper. Broil (or bake) until cheeses are melted and flatbreads are golden brown, 3-5 minutes. (For 4 servings, broil or bake in batches.) TIP: Watch carefully for any burning.

    Allow flatbreads to cool slightly, then slice into pieces. Serve.
