RECIPE
DAY 140 – Tomato and Avocado Salad

Serves 4

Ingredients:

4 Ripe Tomatoes (make sure they are ripe but not mushy) [cut into big wedges]
1 Hass Avocado [cut into wedges]
¼ cup (30 g) Red Onion [sliced]
2 Tbsp (6 g) Fresh Cilantro [finely chopped]
Juice of 1 Lime
1 tsp (5 g) Extra Virgin Olive Oil
Salt & Pepper (to taste)

Process:

1) In a small bowl, add the lime juice, cilantro and extra virgin olive oil, season lightly with salt and pepper, whisk to mix and set aside.

2) In a large bowl, add the avocado, tomatoes, and red onion, season them with salt and pepper, add the dressing and gently mix everything to combine. Serve immediately!
