We are here with a new recipe, Kerala’s famous Ottada (Rice Pancake) with Chicken Bhuna Masala!!

Ingredients for Ottada:

1. Rice powder – 2 cups
2. Hot water – 2 cups
3. Grated Coconut – 1 cup
4. Cumin – 1tsp
5. Shallots – 10-12 (Finely chopped)
6. Salt – To taste

Method of preparation:

1. Mix two cups of rice powder with the ingredients (3-6) then with 2 cups of hot water (Don’t pour together, use enough to form a soft dough).

2. Once the mixture cools down, make a soft dough using your hands.

3. Heat an iron tawa (preferable) or non -stick pan.

4. Divide the dough into three equal portions. Take a clean plantain leaf and place each portion and using your wet palm spread it evenly to form a thick base.

5. Once the tawa is well heated, place another plantain leaf of the same size above and cover the ottada (pancake) and then keep it on the tawa. Keep the flame to high for 3 mins and then lower flame and cover with a lid.

6. Flip the other side and cook evenly for 5 minutes.

7. Ottada (Rice pancake) is now ready.

Ingredients for Chicken Bhuna Masala:

For marination:

1. Chicken – 1.5kgs
2. Ginger Garlic paste- 1 tbsp
3. Red Chilli Powder- 1 tbsp
4. Salt- 1 tsp
5. Turmeric- 1/2 tsp

6. Onions, chopped- 3 medium
7. Ginger garlic paste- 1 tbsp
8. Tomato purée- (2 medium tomatoes)
9. Green chillies, chopped- 3 small ones
10. Red Chilli Powder- 1 tbsp
11. Coriander powder-1 tbsp
12. Cumin powder- 1 tsp
13. Garam masala powder- 1.5 tsp
14. Coriander Leaves
15. Salt – To taste
16. Kasuri Methi – to taste

Method of preparation:

1. Heat a pan with3 tbsp of oil. Add the marinated chicken and fry on high heat for around 5 mins.

2. Now lower heat and continue to fry for another 10 mins on medium heat till chicken is half cooked.

3. Remove the pieces and keep aside.

4. Now, take another large pan and heat 4 tbsp of oil.

5. Add the onions and fry for around 10 mins on medium heat till light brown.

6. Add the ginger garlic paste and cook for 2 mins.

– Add in the turmeric, red chilli powder, coriander powder and cumin powder. Mix well and fry it for 2-3 mins on low heat to cook the masala adding a splash of water to prevent it from burning.

7. Add in the tomato purée, give a mix and then add the salt.
– Add chopped green chillies and give it a mix.

8. Now transfer the half fried chicken pieces to the gravy, add all the juices in the pan too.
– Mix well and ‘bhunno’ the chicken on medium heat for around 5 mins till the chicken is coated with the masala and oil separates.

9. Add a cup of water, mix well and cover & cook for around 10 mins till the chicken is soft.

10. Lastly add the garam masala powder and garnish with coriander leaves!

Serve hot with our Ottada recipe or Rotis/ Rice!
