KADAI CHICKEN

Kadai chicken is the most desired Indian style of making Chicken. Any dish made using Indian wok comes with a prefix ‘kadai’. It comes in different tastes as they are made differently in different regions. The magic to this masala comes from the freshly prepared ground kadai masala. There are even brands seeling these masalas in the market. Lets see the secret to this KADAI MASALA!

Tips to make the best kadai chicken :

– Bone in chicken are the best ones to be used for this recipe. However, you can use any according to availability.
– Frying the onions and bell peppers on high flame can give you a smoky flavour or you can just smoke the dish with charcoal.
– Using fresh ground kadai masala!!

Ingredients :

– Coriander seeds
– Fennel seeds
– Pepper corns
– Fenugreek seeds
– Cumin seeds
– Kashmiri chillies
– Onions
– Capsicum
– Red chillies
– Ginger garlic paste
– Chicken
– Tomato puree
– Turmeric powder
– Red chilli powder
– Coriander powder
– Garam masala
– Kasuri Methi

Preparation :
1. In a pan, add 1 ½ tsp coriander seeds, ¼ tsp fennel seeds, ½ tsp pepper corns, ¼ tsp fenugreek seeds, ½ tsp cumin seeds, 4 kashmiri chillies and dry roast them for 2 mins on medium flame well. Keep aside.

2. Add 2 tbsp oil to the pan and add 1 diced onion and 1 diced capsicum and sauté them on high flame.

3. In another pan, add 2 tbsp of ghee, 2 dried red chillies, ¼ tsp cumin seeds, 2 chopped onions, 1 tbsp ginger garlic paste and sauté them for 5 mins on medium flame.

4. To this add 500 grams chicken and salt to taste. Combine them well and cook till the chicken loses its pink colour.

5. Add 1/3 cup of tomato puree, ¼ tsp of turmeric powder, 1 tsp of chilli powder, 1tsp of coriander powder and 1/2 tsp of garam masala. Cook for 5 mins on medium high flame.

6. Add ¾ cup of water to this. Cover and cook for 5 mins on medium flame or till the water evapourates.

7. Add ¼ cup of yogurt and combine them well. Now grind the roasted spices and add them to the recipe along with the sauted diced capsicum and onions. Mix them all well and top it with kasuri methi.
