I actually created this recipe kinda by accident. I love sun-dried tomatoes and I had purchased this amazing sun-dried tomato Italian dip from Sam’s Club. I had seen a few sun-dried tomato chicken recipes and thought it would be an amazing pasta recipe. My original version was far from skinny so recently I swapped out some of my original ingredients to make it skinny. This is the outcome. Enjoy.
Makes 4 Servings
WW Purple Plan: 1 Point – 1 Serving
WW Blue Plan: Points – 1 Serving
WW Green Plan: Points – 1 Serving
Ingredients:
Skinny Version:
10 ounces of whole-wheat pasta, cooked al dente (originally not whole wheat)
12 ounces of cooked and cubed chicken breast (1 lb raw)
2 cups of pasta water
2 teaspoons of chicken bouillon powder
1 cup unsweetened almond milk (originally half & half)
1 1/2 teaspoons minced garlic
1 tablespoon basil
1 teaspoon red pepper flakes
2 ounces fat-free cream cheese
1/2 cup sun-dried tomatoes without oil, chopped
4 tablespoons Trader Joe’s Giotto’s Bruschetta (originally Bella San Luci Italiano Dip with/oil)
Salt to taste
Pepper to taste
Makes 4 servings
