CHICKEN SHAMI KEBAB RECIPE

Ingredients for Masala Powder:
• Coriander Powder 2 tbsp
• Cumin Powder 1 tbsp
• Dry Red Chillies 15
• Pepper Powder 1/2 tbsp
• Fenugreek seeds 1/4 tbsp
• Badi Saunf 1/2 tbsp
• Green Cardamom 10
• Cinnamon 2 pieces
• Cloves 10
• Bay Leaves 3

Method for preparing Masala Powder:
• On a medium flame, roast dry red chillies.
• Transfer roasted dry red chillies in a plate and keep it aside.
• Then roast cardamom, cloves, cinnamon, bay leaves and badi suanf and roast for 2-3 minutes.
• Now add coriander powder, cumin powder, pepper powder and roast for 2 minutes on low flame.
• Lastly add the roasted dry red chillies, roast for a minute and switch off the flame. Let it cool.
• Grind the roasted ingredients into fine powder and keep it aside.

Ingredients for Chicken Shami Kebab:
• Boneless Chicken 500 gm
• Soaked Chana Dal 1 cup
• Onion 1 medium sized
• Prepared Masala Powder 2 tbsp
• Ginger Garlic Paste 2 tbsp
• Water 1 cup
• Salt to taste
• Green Chillies 2
• Eggs 2
• Lemon Juice 1 tbsp
• Coriander leaves 1 cup
• Pudina Leaves 1/2 cup

Method for preparing Chicken Shami Kebab:
• Wash and soak chana dal for an hour.
• In a non-stick kadai, heat oil and add chopped onions. Fry for 10 minutes on medium flame till it
turns light brown in colour.
• Once the onion turns light brown in color, add ginger garlic paste and saute for 2-3 minutes.
• Then add boneless chicken, salt and mix it well.
• Close the lid and cook on medium flame for around 5 minutes till chicken releases water.
• Then add soaked chana dal, combine well and cook for 2-3 minutes.
• Then add the prepared masala powder and mix it well till the chicken is well coated.
• Close the lid and cook for 5 minutes.
• Add water and cook on medium flame for 10 minutes till the water is dried up.
• Switch off the flame and let the chicken cool completely.
• Now grind the cooked chicken to form a smooth dough.
• Transfer the dough into a bowl and add beaten eggs, finely chopped green chillies, finely chopped
pudina leaves, finely chopped coriander leaves and lemon juice.
• Combine all the ingredients.
• Now shape the dough into flat discs or patties.
• Heat oil in fry pan and shallow fry the patties in batches.
• Fry the patties until it is golden brown and crunchy on both the sides.
• Chicken Shami Kebab is ready to serve.
