Chicken Rezala – Mughlai chicken recipe – chicken in white gravy. Chicken Rezala is a very popular dish in Bengal which is served at many big restaurants . Rezala is a Mughlai dish where the chicken is cooked in a mildly spiced yogurt gravy. Kids also enjoy this dish as it is quite mild .

Ingredients for making Chicken Rezala : Serves 6
For making onion ginger garlic paste-
1. Onion – 2 large / 270 gms /0.6 lb
2. Ginger – 2 inch length , 42 gm /1.5 oz
3. Garlic cloves – 6 to 7 large
Put everything in a blender and blend to a fine paste with little water.
For making poppy seed cashew nut paste –
1. white poppy seeds – 2 heaped tablespoons
2. Cashew nuts – 7 to 8
Soak the above with warm water for about 2 hours. Drain the water and blend to a fine paste adding just a tablespoon of water at a time while blending.
1. Chicken – 1 kilo/2.2 lb. Cut into big pieces
2. Plain yogurt or curd= 1 1/2 cups
3. Red chili – 2 + 1. Soak 2 chilies in hot water. Use the other one for tempering in oil.
4.Dry bay leaf- 2
5. Cinnamon stick- 2 sticks ( 1 inch length)
6. Green cardamoms – 6
7. Salt – 2 teaspoons
8. Sugar – 1 tablespoon or according to your preference.
9. Garam masala powder – 1/2 teaspoon
10. Nutmeg powder – 1/4th teaspoon
11. Kewra water – 1 teaspoon to 1 tablespoon depending on the quality. Do not add too much as that may make the gravy taste bitter. You can even use Mitha Atar ( just a drop ) for this recipe. I didn’t due to its limited availability, but if you have it then please do add it. If using Kewra essence just add a drop
12. Oil -2 tablespoons
13. Ghee – 2 tablespoons
14. Warm water – 1 cup . This gravy must not be too thick or too watery so add water accordingly.
Method for making this white chicken recipe –
1. Add 2 tablespoons of onion ginger garlic paste and 4 tablespoons of yogurt to the chicken , mix well and marinate it covered in the fridge for a minimum of 2 hours, preferably overnight. The more the chicken marinates the better it becomes in taste.
2. Add oil and ghee to pan.
3. Add bay leaves, cinnamon sticks, cardamoms and a dry chili and stir them on low heat till fragrant.
4. Add onion ginger garlic paste and stir on medium heat for 4 to 5 minutes . Do not fry too much as that will destroy the color of the gravy. This recipe needs a white gravy.
5. Add the chicken and stir on medium heat till the chicken turns from pink to white.
6. Lower the heat to minimum and add the yogurt a few spoonfuls at a time
7. Add salt
8. Cover
9. Add poppy seeds and nut paste, sugar and cover
10. Stir from time to time
11. Add nutmeg powder ,Kewra water , garam masala and again cover.
