Bangkok is known for its street food. It was the chicken feet clear broth which I last had on the street of the city, Bangkok. I was surprised to find out that Thai people would also use chicken feet for their recipes besides Chinese use them for Phoenix Claws on a Dim Sum menu along with our Chicken feet soup with peanuts and all. Today I am making my own version of Chicken Feet Hot and Soup with what I recall on the street of Bangkok, with the addition of Chinese Napa Cabbage. Cherry Tomatoes, and Carrots. Level of spicy-high.
Secret ingredient: fresh papaya
1 tray of chicken feet
1 tray of chicken wings
Chilies option:
¼ cup of chilies (you can cut chilies amount if you cannot take too much spicy food)
2 chilies if you can take spicy food moderately.

0 chili if you cannot take spicy food at all.
1 teaspoon of salt to dry fry with chilies
6 tablespoons of sugar
3 tablespoons of fish sauce
2 cups of Chinese Napa Cabbage
1 cup of carrots cut in strips.
1 Kaffir lime leaf
1 cup of cherry tomatoes


Cut off the tips of the chicken feet and remove any yellow part in the area. Rinse chicken feet and wings with salt water and set aside. Using an 8-quartz size pot, fill water to about half of a pot. Bring it to boil. Add in chicken feet and wings. Turn heat down to low and cook for a good one hour or until chicken feet and wings are tender. Chicken feet is notorious for its collagen. The rich gelatin of the feet gives out a rich nutritious stock, and sometimes makes the soup a bit cloudy. So, it is good to cook under low heat for a longer period to obtain a clearer broth. This is where I draw a line between a Chinese soup and a non-Chinese one. Our soup is never spicy, very rarely, and majority of our soup recipes are cooked for at least two to three hours. For this Chicken feet recipe, it is quite spicy if you are used to drinking Chinese soups. However, the flavor is unique, and its recipe is amazingly simple. On a separate pan, add chilies and salt and dry fry them bring out the flavor of chilies. Then add lime juice, fish sauce and sugar. Once done, add this mixture back to the chicken broth. Add in Chinese Napa Cabbage, cherry tomatoes, carrots. Garnish with green onion and cilantro. You can adjust the sweetness by adding more sugar. Sugar lightens the spicy flavor.
Before serving, add chunks of fresh papayas fruits into the soup. This is a must as the fruit balances out the spicy flavor and adds a sweetness and soft texture to the soup and balances out the crunchiness of green onion and cilantro.

I happened to try out this soup during our trip in Bangkok. I saw many people ordered the same type of soup, so I gave it a try. It was unbelievably delicious, but too spicy for my pallet. And the hot and humid weather made it worse. Still, I think this is a very tasty and a unique way of using chicken feet for a quick soup recipe. I Perhaps, you may want to leave out the chilies, and add Tabasco sauce before serving.

This is my own version of Chicken Feet Hot and Sour soup using fresh papaya and green onion and cilantro before serving.
