RECIPES FOR LEFTOVER ROTISSERIE CHICKEN
All recipes serve 1 person, but just 2x, 3x ingredients to feed more.

EASY CHICKEN AND VEGGIE QUESADILLA
Serves 1

Ingredients:
(2) Tortilla Land Tortillas
1/4 cup Monterrey Jack Cheese
¼ cup rotisserie chicken, shredded
3 strips roasted red peppers
1 cremini mushroom sliced
4-5 leaves of baby spinach
½ bag medley rice
Cilantro Sprigs
Sliced green onion

METHOD:
Cook the uncooked tortillas. Then turn the flame off while you build your quesadilla. Add a layer of cheese, chicken, mushrooms, peppers, spinach, more cheese. Top with tortilla and cook for 1-2 minutes per side. Cut into quarters and serve with the rice topped with cilantro and green onions.

EASY CHICKEN AND RICE SOUP
Serves 1

Ingredients:
2 cups (480 ml) chicken broth
2 teaspoons (10 ml) of low-sodium soy sauce
1/2 tsp (2.5 ml) toasted sesame oil
1/2 bag cooked rice medley
1/2 cup cooked rotisserie chicken, shredded
1 sliced mushroom
1/2 cup baby spinach
1 Tbsp sliced green onions
Red Pepper Flakes (optional)

Method:
Place all ingredients in a sauce pot and warm through. Season with red pepper flakes at the end if desired.

EASY BBQ CHICKEN SANDWICHES
Serves 1

Ingredients:
1 cup cooked rotisserie chicken, shredded
1-2 Tbsp Store-Bought BBQ Sauce
1 Tbsp mayonnaise
1 tsp Apple cider vinegar
Pinch of brown sugar
2 dashes of celery seed
1/2 Cup Cole slaw
1 Brioche Bun, toasted

METHOD:
In a bowl add the chicken and toss with the BBQ Sauce. Set aside. In a smaller bowl add the mayonnaise, vinegar, brown sugar, and celery seed, and whisk to combine. Add the cole slaw, and toss to coat.

On the bottom half of the bun, add the cole slaw, then add the BBQ chicken on top, and top with the bun. Serve with chips of choice.
