Texas Chicken Recipes with Jess Pryles: At Home Fajitas


H-E-B is helping you mix up your family’s weekly meal plans this year! Who doesn’t love a steaming plate of chicken fajitas? With the help of this recipe from Jess Pryles, you can make this Tex Mex favorite right in your kitchen!

Ingredients:
3 H-E-B Natural Boneless Skinless Chicken Breasts
2 poblano peppers
1 yellow onion
3 tablespoons Hardcore Carnivore Meatchelada seasoning
1 tablespoon vegetable oil
Mi Tienda Ready To Cook Flour Tortillas
H-E-B Queso Fresco
Mi Tienda Mexican rice

Instructions:
1. De-stem and de-seed the poblano peppers, and cut into ½” strips. Peel the onion, and cut into ½” strips, then set aside.
2. Use a sharp knife to butterfly out the chicken breasts, then press firmly with the palm of your hand to even and flatten them.
3. Season the chicken well on both sides with the Hardcore Carnivore Meatchelada seasoning.
4. Preheat a pan over high heat. Once hot, add the chicken and cook for 7 minutes per side. Continue to cook until the chicken reaches 165°F internal temperature. Remove from pan, and rest under foil.
5. While chicken is resting, add oil to the same pan, then add the sliced onions. Cook for 6-8 minutes until tender and caramelized. Then add the poblano peppers and cook a further 5 minutes.
6. Slice the chicken breast, then arrange on top of the pepper and onions. Garnish with crumbled queso fresco, and serve with tortillas and rice.
