Chef Maria recalls the days of her experimentation with food when she got stuck with a favourite dish- Salt Dome Chicken. She bakes Goan Poee and serves Chocolate Flower Dessert.
For the crust add 1.5kg of plain flour,300gm coarse sea salt,600gm regular salt and2 lightly whisked eggs.until its nicely mixed. Add water as required.Take it out onto the tabletopand knead well.

To prepare the chicken.insert 40gm of cold butter cubes under
the skin of the chicken.Now add 4 cloves of thinly sliced garlic and a thinly sliced whole lime.Drizzle 1 tsp oil, salt to taste and 2 tsp of pepper.Roll out your dough into a thick sheet.
Now take your dough sheet and carefully cover the entire chicken with it. Make sure you cover any gaps with extra dough.
In a preheated oven at 200°C bake for 50-60 mins.Take it out of the oven and break the salt dome.For the dressing take 200ml of oil. Add rosemary, thyme, garlic and dried red chillies until it boils.
Add the hot oil to the freshly opened chicken and serve.”
