Pan Fried Chilli Chicken

Ingredients:
===================

Chicken (with bone / boneless) : 500 gms cut into small pieces
Onion : 2 Medium size diced in big pieces
Capsicum : 1 Medium cut into big cubes
Green chillies: 6 cut diagonally
Ginger and Garlic Paste: 1 tsp
Garlic : 4-5 cloves of garlic roughly crushed
Pepper powder: ½ tsp
Vinegar: 1 tsp
Soy Sauce: 2 tbsp
Refined oil: 4 tbsp
Sugar : ½ tsp
Salt : ½ tsp or As per taste
Corn flour starch : 1 tbsp soaked in 4 tbsp water
All purpose flour: 3 tbsp
Spring onions : 2 tbsp chopped
For Marinating the chicken:
Ginger and Garlic Paste: ½ tsp
Salt : ½ tsp
Vinegar: 1 tsp
Red Chilli Powder : ½ tsp
Refined oil: 2 tsp

Method:

Marinade the chicken with all the ingredients. Cover it and let it sit for 2 to 3 hrs.
Heat oil in a skillet. Take the all purpose flour in a plate and coat the marinated chicken one by one with flour and put it in skillet to fry. Fry the chicken pieces till crispy golden brown. Take them out and keep aside.
Now in the same oil put the pepper powder give a quick stir and add the crushed garlic. Stir it for seconds and add the diced onions. Fry a little till the onions turn a little translucent. Now add the capsicum and green chillies. Mix well and add salt and vinegar. Cook for a minute. Do not overcook the vegetables. The crunch of the vegetables will add its taste to the dish. Add ginger & garlic paste and fry till the raw smell evaporates. Now add sugar and the fried chicken pieces. Mix very well and add soy sauce. Now finally add cornstarch and bring to boil stirring constantly. Lastly when the gravy thickens and oil get separated garnish with chopped spring onions and serve hot as starters or else can be accompanied with fried rice or noodles.
