INGREDIENTS
• 4 large boneless skinless chicken breasts, hand trimmed
• 2 tbsp olive oil
• 1 tbsp Chef Ange Base Seasoning – https://youtu.be/1Yt_jN1tDfY
• ½ tsp smoked paprika
• ½ tsp Italian seasoning
• 1 small shallot, finely chopped
• 5-8 garlic cloves, minced
• 1 cup sundried tomatoes, thinly sliced
• 2 tsp white wine vinegar
• ¼ cup dry white wine
• ½ cup chicken stock
• 1 tbsp tomato paste
• 1 tbsp roasted garlic bouillon paste
• ½ tsp dry oregano
• ¼ tsp crushed red pepper
• salt & pepper
• ¼ cup parmesan cheese, grated
• ½ cup half and half or heavy cream
• thickener of choice, 1 tbsp flour OR ¼ tsp guar gum (gluten free)
• ¼ cup fresh basil, thinly sliced (for garnish)

DIRECTIONS
1. Preheat oven to 375F.
2. In a large mixing bowl, season chicken with 2 tbsp olive oil, Chef Ange Base Seasoning – https://youtu.be/1Yt_jN1tDfY, smoked paprika and Italian seasoning.
3. Heat a cast iron or heavy bottomed pan with a oven safe lid over medium high heat and sear chicken for 2-3 minutes on each side or until golden brown. Chicken does not have to be cooked all the way through. Remove from pan and set aside.
4. Reduce heat to medium and add shallots to pan, moving them around and scaping the bottom of the pan. When beginning to soften add garlic and cook for 1-2 minutes or until fragrant.
5. Add white wine vinegar, white wine, chicken stock, tomato paste, bouillon paste, oregano, crushed red pepper and mix. Season with salt and pepper and let simmer a little to reduce and evaporate a little of the liquid, about 2-3 minutes.
6. Add parmesan cheese, half and half OR cream and thickener of choice and whisk until blended smooth.
7. Add sundried tomatoes and seared chicken to pan along with any juice that collected. Baste chicken with sauce, cover and place in oven for 20-25 minutes or until chicken reaches +165F.
8. Remove from oven, uncover and garnish with fresh basil.
