Kibris Tatlisi (Cyprus Dessert)
Serves 7-8
Recipe in English:

Ingredients:
Prepare Walnut Cake:
-Anday (Eggs) 4 (room temperature)
-Bareek cheeni (Caster Sugar) ¾ Cup
-Cooking oil ¾ Cup
-Pakola Full Cream Milk ¼ Cup
-Maida (All-purpose flour) sifted 1/3 Cup
-Breadcrumbs 1 Cup
-Khopra (Desiccated Coconut) 1 Cup
-Baking powder 2 tsp
-Namak (Salt) ¼ tsp
-Vanilla essence 1 tsp
-Akhrot (Walnuts) chopped 1 Cup
Prepare Sugar Syrup:
-Bareek cheeni (Caster sugar) ¾ Cup
-Hot water 1 Cup
-Lemon juice ½ tsp
Prepare Cream Custard:
-Pakola Full Cream Milk 750ml
-Cornflour 3 tbs
-Maida (All-purpose flour) 2 tbs
-Sugar ½ Cup
-Vanilla essence 1 tsp
-Whipping cream ½ Cup
-Khopra (Desiccated coconut)
-Akhrot (Walnuts) chopped
-Strawberry

Directions:
Prepare Walnut Cake:
-In a bowl,add eggs,sugar & beat well until foamy (approx. 3-4 minutes).
-Add cooking oil,milk & beat well.
-Add all-purpose flour,breadcrumbs,desiccated coconut,baking powder,salt,vanilla essence & beat until well combined.
-Add walnuts & fold with the help of spatula.
-In greased baking dish,add prepared batter,spread evenly & tap few times.
-Bake in preheated oven at 180C for 30 minutes (on lower grill).
-Take out cake from oven & let it cool completely.
Prepare Sugar Syrup:
-In a jug,add caster sugar,hot water,lemon juice & mix well until sugar is dissolved.
-Poke holes all over the cake with the help of wooden skewer.
-Slowly pour sugar syrup (as required) over the top of the cake,filling holes & refrigerate for 1 hour.
Prepare Cream Custard:
-In a saucepan,add milk,cornflour,all-purpose flour,sugar,vanilla essence & whisk well.
-Turn on the flame,mix continuously & cook on low flame until desired thickness (approx. 6-8 minutes).
-Transfer to a bowl,let it cool & refrigerate for 2 hours.
-Now add whipping cream & beat for 2-3 minutes.
-Pour prepared cream custard all over the cake & level with spatula.
-Sprinkle desiccated coconut & refrigerate for 2-3 hours.
-Cut into desired slices,garnish with walnuts,strawberry & serve!

-Cooking oil dal ker ache tarhan beat ker lein.
-Maida,breadcrumbs,khopra,baking powder,namak aur vanilla essence dal dein aur ache tarhan beat ker lein.
-Akhrot dal dein aur spatula ki madad sa fold ker lein.
-Greased baking dish mein tayyar batter dal ker evenly pheela lein aur few times tap ker lein.
-Preheated oven mein 180C per 30 minutes kliya bake ker lein (on lower grill).
-Cake ko oven sa nikal lein aur thanda ker lein.

-Jug mein bareek cheeni,garam pani aur lemon juice dal dein aur cheeni ghul janay tak ache tarhan mix ker lein.

-Sugar syrup (as required) ko cake ka upper dal dein aur holes ko fill ker lein & 1 hour kliya refrigerate ker lein.

-Saucepan mein doodh,cornflour,maida,cheeni aur vanilla essence dal ker ache tarhan whisk ker lein.
-Chulha on karein aur musalsal mix kertay hoye halki ancch per garha ho janay tak paka lein (approx. 6-8 minutes).
-Bowl mein nikal lein aur thanda ker lein aur 2 hours kliya refrigerate mein rakh dein.
-Ab whipping cream dal ker 2-3 minutes kliya ache tarhan beat ker lein.
-Tayyar cream custard ko cake ka upper dal ker spatula ki madad sa pheela lein.
-Khopra sprinkle ker lein aur 2-3 hours kliya refrigerator mein rakh dein.
-Desired slices mein cut ker lein,akhrot aur strawberry sa garnish ker ka serve karein!
