Crispy Air Fried Chicken. Health-ish Classic Done Right!

Nothing Beats home cooked classic meals. Something about the meals we ate growing up puts us back into a happy place that’s full of comfort.

My favorite meal growing up was Fried Chicken, Corn, and Rice. This is a southern classic! Instead of deep frying my chicken I used my air fryer for a healthier version. You will achieve the same crunch, flavor, and comforting goodness without the need to use a deep fryer.

Follow my steps for perfectly battered air fried chicken. You will have the crispy skin that we all love with only using extra virgin olive oil.

Tips:
• When cooking your rice use chicken broth or vegetable broth additional to or instead of water for a more flavorful pot of white rice.
• When cooking canned creamed corn add lots of butter and a teaspoon of regular black pepper.
• Top chicken off with Louisiana Hot sauce (or your favorite brand of hot sauce).
• Eat with fresh bread.

Ingredients:
Adobo (substitute with sea salt or Himalayan salt if preferred)
Black pepper
Onion powder
Paprika
Creole seasoning
Dried Italian seasoning
Garlic powder
Minced garlic
Siracha
Flour (substitute for almond flour if preferred)
Cornstarch
Baking powder
Panko crumbs
Hidden Valley Ranch Seasoning
Chipotle chili pepper

To prepare chicken follow these steps:
Season chicken with Adobo (substitute with sea salt or Himalayan salt if preferred), black pepper, onion powder, paprika, creole seasoning, dried Italian seasoning, garlic powder, minced garlic, and siracha.

When combining the seasoning with the chicken be sure to pull the skin back to season the chicken thoroughly. Before placing into air fryer pull the skin back over the chicken.

Set air fryer to 380 degrees and cook timer for 30 minutes. Make sure chicken is always coated with olive oil before and throughout cooking. When chicken is half cooked place sliced yellow onions on chicken.

Batter:
For Batter follow these steps:
Place egg white and flour mixture into separate bowls.
Season egg whites with creole seasoning, black pepper, and garlic powder.
Season flour mixture with creole seasoning, onion powder, black pepper, garlic powder, adobo, and Italian seasoning.

NOTE: only ¼ to ½ teaspoon needed for each seasoning when adding into the bowls, do not season heavy.
Steps to batter are:
1. Flour
2. Egg
3. Flour
After the first dip in flour and egg add cornstarch, baking powder, and panko crumbs.

Topping:
In a small bowl combine Hidden Valley Ranch Seasoning, Italian seasoning, garlic powder, and chipotle chili pepper. Add onto cooked chicken before serving.
