Today we’re featuring easy ground beef recipes with just a few ingredients. The Chopped Cheese is like a combo Philly cheesesteak meets cheeseburger plus a little sloppy joe mixed in. Our Walking Taco Casserole is like a big Frito pie made for a crowd! Its a super easy nacho casserole dish that you can make as spicy as you like. And who doesn’t love a good sloppy joe on a nice soft steamed bun?! Our sloppy joe is seasoned with a few ingredients you probably always have on hand – ketchup, bbq sauce, garlic powder, worcestershire sauce – and so much tastier than a can of Manwich.

Chopped Cheese Recipe Ingredients
1 lb ground beef
1 cup onion, thinly sliced
5 – 8 American cheese slices
kosher salt and ground pepper
tomato, thinly sliced
sandwich rolls or buns
hot sauce (optional)
Chopped Cheese Sandwich Recipe Directions
These chopped cheese sandwiches will come together in about 10 minutes. Heat a large skillet over medium high heat, and dust the bottom with some seasoning salt. Once the pan is hot, add the ground beef, and use a spatula or burger press to spread the meat out into a thin layer.
Let the meat sear, don’t turn it yet. Sprinkle the top with seasoning salt. Once you see the edges of the beef start to get crispy and brown, flip the meat. Toast the buns.
Move the beef to one side of the skillet and add the thinly sliced onions to fry. While the onions continue to cook, chop the beef into chunks about a ¼ inch in size. When the onions are fried and nicely browned and the beef is cooked through, mix them together and start to gather together in a pile in the middle of the pan.
Top with the American cheese slices, then reduce the heat to low and cover the pan so the cheese can melt.
To serve, mix together mayo and hot sauce, and spread over the top and bottom buns. Layer on tomato slices, hot chopped cheese and top with crisp iceberg lettuce. Rich, salty cheesy chopped cheese, like a combination philly cheese steak, cheeseburger sloppy joe.
Walking Taco Casserole Ingredients
1 lb ground beef
2 tsps chili powder blend
1/2 tsp kosher salt
1/2 tsp onion powder
1 tsp cumin
1/2 tsp smoked paprika
1 can Rotel tomatoes, undrained
1 can black beans, drained and rinsed
2 oz cream cheese, softened
1/2 can enchilada sauce
1 cup shredded cheddar cheese
Fritos corn chips or tortilla chips
Serve with your favorite taco toppings (sour cream, tomatoes, chopped red onions, cilantro)
Walking Taco Casserole Directions
Brown the ground beef. Mix the taco seasoning together, you could also use your favorite packaged taco seasoning. Remove any extra fat from the ground beef, then season the ground beef with the taco seasoning to your taste – you may want to add some, or all depending on your personal taste.
Add a can of Rotel tomatoes, undrained. Simmer until the liquid has evaporated. Then add 1 can of drained and rinsed black beans. Mix to combine, then add 2 oz cream cheese. Stir to melt and combine. Remove from heat and stir in a ½ can of enchilada sauce.
In a 9×13 baking dish, spread a layer of Fritos or tortilla chips. Add half the beef mixture over the chips, spread a layer of shredded cheese, followed by more chips, the rest of the beef mixture and top with cheese.
Bake in a preheated 350 degree oven for 15-20 minutes until the cheese is melted and the taco casserole is heated through. Top with shredded lettuce, tomatoes, chopped red onions, cilantro and sour cream! This walking taco casserole is an easy dinner that tastes great and its super flavorful!
Homemade Sloppy Joes Recipe Ingredients
1 lb ground beef
1/2 cup ketchup
1/4 cup bbq sauce
1/2 tsp garlic powder
1 tsp yellow mustard
1/2 tsp worcestershire sauce
For serving, your favorite soft buns and sliced cheese
Start by browning a pound of ground beef in a large skillet, dusted with seasoned salt. Cook the meat until the pink is gone, breaking it into bite size chunks. While it’s cooking, mix together a ½ cup ketchup, a ¼ cup bbq sauce, I’m using Sweet Baby Rays, ½ tsp garlic powder, 1 tsp yellow mustard, ½ tsp worcestershire sauce. Give this a stir. Pour the sauce over the ground beef and heat just until the sauce is heated through. Serve on soft buns and your favorite toppings!
