Easy Chicken Recipes | Chinese 3 Cup Chicken

This traditional Chinese 3 Cup Chicken (三杯雞) is super quick and easy to make. In fact, it is probably one of the easiest chicken recipes ever! It is sweet, savoury and aromatic and ideal as a quick dinner idea that the whole family will enjoy.

01. 400 to 500 g chicken thigh
02. 1 tbsp corn flour
03. 2 spring onion
04. 6 small slices of ginger
05. 2 tbsp light soy sauce
06. 2 tbsp Shaoxing rice wine
07. 2 tbsp sesame oil
08. 1 tbsp chicken stock
09. 1 tsp sugar
10. 1 tbsp cooking oil

It is called 3 cup chicken because soy sauce, rice wine and sesame oil are used in equal measure.

Traditionally, a whole chicken was cut and cooked with 3 cups of soy sauce, rice wine and sesame oil. But if you are only cooking half a chicken or a quarter of a chicken or just a few thighs, then you don’t need 3 cups of sauces.

3 cup chicken is an ideal homemade meal because it is not only tasty but extremely easy to make. It only takes about 20 to 25 minutes to prepare and cook.

Although 3 cup chicken comes from mainland China, it has become very popular in Taiwan where it has become almost a “national dish”. The Taiwanese have modified the dish with additional ingredients, in particular basil. However, my recipe is very much the traditional Chinese version.
