Chipotle Taco Beef & Sweet Potato Bowls
Easy high-protein meal prep inspired by my favorite Chipotle-style bowls at home.
These bowls have seasoned beef with a nice crust, roasted sweet potatoes, peppers and onions, black beans, corn, and a creamy chipotle honey lime sauce over the top.

Serving Size: 1 medium roasted sweet potato, 175g cooked beef, 100g bean and corn mix, 75g peppers and onions, 2 tbsp chipotle honey lime sauce Cooking Time: 40 min
Ingredients:
Beef:-2 lbs lean ground beef
Homemade Chipotle Taco Seasoning:-equal parts garlic powder, onion powder, smoked paprika, and dried oregano-1/2 part chipotle chili powder-salt and pepper to taste
Potatoes:-5 medium sweet potatoes, halved-oil spray-salt and pepper
Veggies:-3 bell peppers, thinly sliced-1 red onion, sliced-oil spray-salt and pepper
Beans + Corn:-1 can black beans-1 can yellow corn-chipotle taco seasoning
Chipotle Honey Lime Sauce:-1/2 cup Greek yogurt or mayo-1 tbsp honey-juice of 1 lime-1/4 tsp chipotle powder-1/4 tsp smoked paprika-salt
Instructions:
-roast sweet potatoes and peppers/onions at 400°F for about 30 minutes until tender and caramelized
-brown ground beef in a hot pan, press down for a crust, then season and break apart
-empty entire contents of canned black beans and corn into a pot and simmer with taco seasoning for 10 minutes
-mix together chipotle honey lime sauce ingredients
-build bowls with sweet potatoes, beef, peppers/onions, black beans, corn, and sauce
