This tropical chicken dinner screams "SUMMER" Here are the deets on the recipe: INGREDIENTS: (I doubled this to have extra for lunch the next day) - 2 chicken breasts - 1 red bell pepper - 1 small yellow onion - teriyaki sauce (2tbsp) - bbq sauce (10-12tbsp) - pinch of salt - pinch of pepper - 4 tbsp avocado oil FRIED RICE: - 1/4 cup basmati rice - peas and carrots combo (frozen) 1/4 cup - 1/8 cup diced pineapple - 5 tbsp diced red onion - 3 tbsp coconut aminos - 2 tbsp fish sauce - chopped green onion (3 tbsp) - 2 tbsp sesame seeds - 1/2 avocado (optional garnish) PREP: Dice chicken Add salt, pepper and 1 tbsp avocado oil Put chicken in pan over high Cook chicken till cooked through, then add diced red bell peppers and yellow onion Combine sauces and add to the chicken and veggie mixture Meanwhile, rinse rice and prepare rice according to package directions When almost fully cooked, add peas & carrots and 1 tbsp avocado oil Dice 1/4 cup pineapple & onions. Put them in a pan on high. Let them cook a little before you add the rice, peas, and carrots to the pan. Add coconut aminos and fish sauce. Stir and let the rice cook a little more Serve the fried rice with the chicken mixture, add pineapple and green onion & (optional) avocado! #recipes #healthyrecipe #dinnerrecipe
