Chicken Lollipop Recipe I Drums of Heaven – including cutting steps I चिकन लॉलीपॉप I Pankaj Bhadouria

Chicken lollipops, also known as drums of heaven, is a popular restaurant recipe.
Chicken lollipop recipe is made using chicken wings that are marinated, fried and then tossed in a sweet spicy sauce.

Chicken Lollipop
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Serves: 3-4
6 chicken wings
1 tsp red chili paste
2 tsp + 1 tbsp dark soya sauce
2 tbsp tomato ketchup
1 + 1 tbsp chopped garlic
1 + 1 tbsp chopped ginger
2 tbsp minced onion
1 tsp chopped green chilies
1 + ½ tsp black pepper powder
1 + 1 tbsp vinegar
2 tbsp corn flour
1 tbsp flour
Salt to taste
Oil to fry
1 egg white
Spring onions to serve
De joint the chicken wings and push the meat from one end of the bone to the other to clear the bone. Turn over the meat on the other end to resemble a lollipop.
In a large bowl, take the chili paste, 2 tsp soya sauce, 1tbsp minced garlic, 1 tbsp ginger, 1 tsp pepper powder, ½ tsp chopped green chilies, 1 tbsp vinegar, ½ tsp salt. Mix well.
Rub all the prepared lollipops and marinate for 30 minutes.
Heat 1 tbsp oil in a pan.
To very hot oil, add the remaining ginger, garlic, onions and sauté till golden in color.
Meanwhile, mix together the remaining soya sauce, vinegar, ketchup, pepper powder and 1/4 cup water. Cook till the sauce thickens. Remove from fire.
To the marinated lollipops, add the corn flour, flour and egg white.
Mix well.
Heat at least 2” oil in a pan.
To hot oil, add the lollipops ad fry to a golden color.
Remove on an absorbent paper.
Reheat the prepared sauce and add the fried lollipops. Toss well, remove on the serving plate, garnish with chopped spring onions and serve hot.
