INGREDIENTS
1. Chicken – 1 Kg
2. Coconut – 1/2 Coconut
3. Onions – 2
4. Curry Leaves – 1/2 Cup
5. Coriander Leaves – 1/2 Cup
6. Green Chillies – 2
7. Turmeric Powder – 1/2 Teaspoon
8. Chilli Powder – 3 Teaspoons
9. Salt – 2 Teaspoons
10. Cloves – 7
11. Cardamom – 5
12. Cinnamon Sticks – 3 Small Pieces
13. Pepper – 1/2 Teaspoon
14. Cumin Seeds – 1 Teaspoons
15. Fried Coriander Seeds – 3 Teaspoons
16. Ginger Pieces – 3-4
17. Garlic Cloves – 10-12
18. Lemon Juice – 2 Tablespoons

Letís see how to fry chicken without oil
This is a Kerala style chicken recipe
Chicken here is cooked with coconut milk
Chicken needs to be marinated first
To a mixie jar, add cloves, cardamoms, cinnamon sticks, pepper, fried cumin seeds, fried coriander seeds and powder it
Add ginger and garlic cloves. Ginger garlic paste also could be used
Add diced onions and grind it into a paste
Masala is ready now
Let’s marinate chicken now.
Here I took 1 kg chicken.
Make cuts in the chicken if the pieces are big. This would allow for the chicken to marinate properly
To cleaned chicken, add 3 teaspoons chilli powder, 1/2 teaspoon turmeric powder, 2 teaspoons salt or salt to taste, 2 tablespoons lemon juice, prepared masala paste and mix
Let it sit for 1/2 hour. You can even put it in the fridge
Let’s make coconut milk in the mean time
Cut the coconut into pieces
Take the half coconut piece and powder it
Add 1/2 cup water and grind it
Strain the mixture.
Squeeze the leftover coconut mixture in the strainer to extract the coconut milk
Make 1 glass of coconut milk, i.e., around 1/4 litre
Heat a pan with thick base
Add coconut milk, marinated chicken and mix
Close lid and cook on high flame
Keep stirring at regular intervals so that it doesnít burn
We can see the oil floating while cooking. This oil comes from the chicken and coconut milk
After the gravy thickens, turn the stove to low flame
If you need more gravy in the curry, let the chicken be like this
Too fry it dryly, cook till all the water boils away
Add curry leaves, coriander leaves and roast for 5 minutes on low flame
Serve hot!
