Coorgi Style Chicken fry is very delicious and easy to make chicken recipe. This chicken fry is beautifully balanced with the right combination of earthy spices and surprise sourness of Kachampuli or Coorg Vinegar which is the star ingredient in this recipe. The dry roasting the spices will bring out the essential oil and makes it more aromatic and flavorful. The spicy and tangy semi dry gravy is well coated on the chicken pieces and each bite will make you crave for more. Whether you choose to have it with steamed rice, curd rice or chapathi, this spicy and tangy chicken fry will give you the feel of an exotic meal.

Note :
Kachampuli is a fruit-based vinegar. It is extracted from ripe fruits of garcinia gummi guttu, a sightly fermented dark syrup. This seems to be one predominant flavor in most Coorg recipe-the sourness from kachampuli.

Ingredients :

500 gms Boneless Chicken (cut into medium size cubes)

Marination :
½ tsp Turmeric Powder
1 tsp Kashmiri Red Chilli Powder
½ tsp Salt (or as per taste)

Dry Roasting of whole spices :
1 tsp Coriander Seeds (dhaniya)
½ tsp Cumin Seeds (jeera)
1 tsp Black Peppercorns (Kalimirch)
½ tsp Fennel Seeds (saunf)
1 tsp Mustard Seeds (rai)
1 tsp Garam Masala Powder

Other Ingredients :
3 tbsp Vegetable Oil (Sunflower Oil)
1 medium size Onion (sliced)
4 to 5 Garlic cloves (finely chopped)
1 inch thick Ginger (finely chopped)
2 nos. Green Chillies (finely chopped)
Few Curry Leaves
½ tsp Kachampuli Paste (purchase link given below)
Few Coriander Leaves (chopped)

Note : tsp is teaspoon
tbsp is tablespoon
