Large flour tortillas 2
Boneless chicken breast 1 cut into thin strips

For Marination

Lemon juice 1 tbsp
Chopped garlic 1 tsp
Chili powder ½ tsp
Crushed red pepper ½ tsp
Black pepper ½ tsp
Cumin roasted & crushed 1 tsp
Salt 1 tsp
Oregano 1 tsp
Oil 2 tbsp

Ingredients for Sauce

Cream ½ cup
Lemon juice 2 tbsp
Oregano ½ tsp
Ground cumin 1 tsp
Mayonnaise ¼ cup
Hot sauce 3tbsp
Ketchup 2 tbsp
Chili powder ¼ tsp
Garlic powder ½ tsp
Paprika ½ tsp
Chicken powder ½ tsp
Salt ½ tsp

To Assemble

Sliced onion 1
Capsicum ½ cut into strips
Grated cheddar cheese 1 cup
Melted butter 2 ounce


Mix together all the ingredients for sauce and keep aside. Apply marination ingredients to chicken julienne, keep it for 30 mins. Heat grill pan with some oil, grill chicken strips for 5 mins or until done. Heat butter in the same grill pan and quickly stir fry onion, capsicum for a minute.

Place 1 large tortilla on counter and apply sauce, place chicken strips and vegetables on it, add shredded cheese, tightly roll it up, prepare 2 large rolls, cover them with plastic wrap, place it in freezer for 15 mins, once the rolls are set, cut each piece into slices, put them in a platter, keep them at room temperature, serve with salsa and sour cream.



Ingredients& Method for Chicken

Chicken breasts 2 boiled)
Ginger 1 piece
Carrot 2 inch piece
Spring onion 1
Salt ¼ tsp
Black pepper ¼ tsp
Water 1 cup
Butter 1 ounce
Mince onion 1 cup
Chopped garlic 1 tsp
Chopped green chilies 1 tbsp
Lemon juice 1 tbsp
Cheddar cheese ½ cup
Chopped green spring onions 1 cup
Salt ½ tsp
Black pepper ½ tsp
Chicken powder ½ tsp
Fettuccine pasta (boiled) ¾ cup

Chicken breasts 2 boiled with ginger 1 inch piece, 2 inch piece of carrot, spring onion 1, salt and pepper ¼ tsp each, water 1 cup till chicken done, discard all the ingredients, chopperize chicken with butter 1 ounce softened, onion, mince 1 cup, garlic chopped 1 tsp, green chilies finely chopped 1 tbsp, lemon juice 1 tbsp, cream cheese 3tbsp, cheddar cheese ½ cup, spring onions finely chopped 1 cup, salt ½ tsp, black pepper ½ tsp, chicken powder ½ tsp, boiled fettuccini ¾ cup

Ingredients for Coating

Flour as required
Beaten with salt and black pepper 2 eggs
Dry bread crumbs as required
Oil for deep frying


To make crockets, put cooked chicken breasts in processer along with all the ingredients mentioned above except for boiled fettuccini, once the mixture is smooth, remove in a bowl, mix the boiled pasta in it, shape crockets with greased hands, place them in a freezer for 30 mins, coat them first in flour, then in beaten egg and finally in crumbs, deep fry.




Chicken boneless cubes ½ kg
Baking powder 1 tsp
Pineapple cubes 1 ½ cup
Capsicum 2 cut in cubes

For Marination

Chili powder 1 tsp
Black pepper 1 tsp
Salt 1 tsp
Chicken powder 1 tsp
Vinegar 2 tbsp
Soy sauce 3 tbsp
Chili sauce 2 tbsp
Hoisin sauce 2 tbsp
Chopped garlic 1 tsp
Oil ¼ cup
Skewers as required


Apply baking powder on chicken and keep aside, mix all the ingredients for marinade in one bowl, mix capsicum cubes and pineapple in another bowl, add 3 tbsp of marinade in pineapple and capsicum and toss, add chicken to remaining marinade, leave it for 2 hours, put chicken cubes on the skewer alternating with capsicum and pineapple cubes, put them on a greased baking tray, bake them on 180 D for 20 mins or pan fry.
