Ingredients to make Bamboo rice payasam
Bamboo rice – 1 cup
Water – 3 cups
Jaggery Powder – 1 cup
Thin Coconut Milk – 3 cups
Thick Coconut Milk – 1 cup
Cardamom Powder – 1 tsp
Cumin Powder – 1 tsp
Nuts, Raisins, Coconut, Ghee

Method to make Bamboo Rice Payasam
1. Soak the bamboo rice for 12 hours.
2. Cook the soaked bamboo rice in a pressure cooker for 4 whistles.
3. After cooking add jaggery powder and cook till it becomes thick.
4. Add thin coconut milk and cook for around 20 minutes or till it becomes thick.
5. Finally add thick coconut milk and boil it once.
6. When it cools down it will become thicker.
7. While serving add ghee-fried nuts, raisins, and coconut pieces.
