Delicious Chicken Rasam Recipe

Ingredients:
For Masala:
- 1 pc dry chili
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- Curry leaves
- 2 tbsp. coriander seeds
- 1 pcs tomato
- 1 pc bay leaf
- 1 pc green chili
For Curry:
- 500g chicken
- 6 pcs shallots
- 1 pc green chili
- 1 tbsp. ginger garlic
- 1/2 tsp turmeric
- Handful fresh coriander leaf
- Salt
- 4 tbsp. gingerly oil
- 1 tsp ghee up to individual taste
- 1/2 lemon juice
- 2 pcs bay leaf
- 4 pc small cinnamon sticks
- 2 pcs anise
- 4 pcs cardamom
- 1/2 tsp cumin
Method:
- To make the masala, into a pan add in 2 tbsp. coriander seeds
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- 1 pc bay leaf
- 4 pc cinnamon sticks
- 1 tsp black pepper
- 1 pc dry chili
- Toss it around
- Add in some curry leaves
- Then add in all the spices into the grinder and grind it to a fine powder
- Then add in 1/2 pc tomato into the powder and then grind it once more and keep the masala aside
- To make the curry, into a sauce pan add in 4 tbsp. gingelly oil
- 1 chopped onion
- Some salt and sauté until the onions are brown
- Then add in 2 pcs of bay leaves
- 1/2 tsp of cumin
- 2 pcs of anise
- 4 pcs of cardamom
- 4 pcs of cinnamon sticks
- Sauté it
- Add in curry leaves
- 1 pc of green chili
- 1 whole garlic and 6 shallots roughly pounded
- Followed by 500g of chicken
- 1 tbsp. ginger garlic paste
- 1/2 tsp turmeric
- Mix the chicken well with the spices
- Add in some coriander stalks
- Then squeeze in 2 pcs of tomatoes into the sauce pan
- Give it a good mix and close the lid to cook the chicken
- Open the lid after 10 minutes and add in the masala that was prepared earlier
- Add in 1 litre of water
- Add some salt to taste
- Close the lid once more and let the chicken cook
- Once it's done open add in 1/2 lemon juice
- Coriander leaves
