Ingredients:
- Cabbage : 2 lbs, 900 g
- One red bell pepper, diced
- One medium size yellow onion, diced
- Olive oil: 2 tbsp
- Salt and pepper to taste
- Ground beef: 1 lb, 450 g
- Seasoning: salt, paprika, onion powder, garlic powder and Italian herb blend: 1 tsp of EACH
- A pinch of chili flakes
- Garlic: 3 cloves, minced
- Marinara sauce: 1 cup, 245 g
- Sweet corn: 1 cup,165g ( canned or frozen)
- Black beans or pinto beans: 14 oz, 400 g
- Mexican blend cheese: 2 cups, 225 g ( divided)
- Grated Parmesan: 2 tbsp
- Scallions: for garnish

0:00 chop the cabbage, dice the bell pepper and onion finely.
1:51 Heat olive oil over medium heat and saute onion and bell pepper for 2 minutes, next add the cabbage and season with salt and pepper, cook stirring occasionally for 10 to 12 minutes. Take it off the heat and set it aside.
3:24 Heat a drizzle of olive oil over medium high heat. Add the ground beef, cook and crumble until no longer pink. Add the spices and minced garlic and cook for a minute or two. Add the marinara sauce and stir to coat. Then take it off the heat.
5:37 Assemble the dish: add the cabbage mixture to the pan, add sweet corns, beans, one cup of cheese and mix well.
6:26 Transfer the mixture to a 9 by 13 inch baking dish and spread out evenly. Top it with grated Parmesan and bake in a preheated oven at 400°F/ 200° C for 30 minutes. Then take it out of the oven and top with the second cup of cheese, bake for another 5-10 minutes, until the cheese has melted.
