Drain and mash the pumpkin. Heat butter or clarified butter . Add the pumpkin, cook stirring continuously. Allow the puree to reduce, thicken and darken, for about 10 minutes. Stir in the sugar. Continue cooking until the halwa reduces into a deep amber & glossy mixture. Spoon into a serving dish & serve hot, decorated with raisins, coconut and almonds. Stir Fried Noodles: INGREDIENTS Chinese noodles ½ packets Ginger 1 piece Spring onion 1 Carrot 1 Sesame oil 3 tbsp Oyster sauce 3 tbsp Soya sauce 2 tbsp Method: Boil noodles in salted boiling water until done and then drain and set aside and let cool. Heat oil in a wok. Add ginger and spring onion and stir fry on high and then add the noodles and stir fry for few minutes. Add oyster sauce and soya sauce. Stir until noodles are well coated and then serve with the honey chilli chicken. Honey Chilli Dry Chicken: Ingredients: Chicken breasts, sliced ½ kg Salt ½ tsp Soy sauce 1 tbsp Sugar 1 tsp Corn flour 2 tbsp Egg 1 Oil for frying Other ingredients: Onions, cut in squares 2 Green chilies cubes cut 6-8 Oil 1 tbsp Garlic, crushed 1 tbsp Ginger, sliced 1” piece Sugar 1 tsp Soy sauce 1 tbsp Honey 2 tbsp Method: Marinate chicken with salt, soya sauce, sugar, egg and corn flour and set aside. Heat oil. Deep fry the chicken one at a time till done. Remove and set aside. For the sauce, heat oil, add crushed garlic, sliced ginger and sauté, add fried chicken pieces, mix in onion, green chilies, salt, sugar, soya sauce, mix well and lastly add in honey.
