What is tres leches ?
A tres leches cake, "a Dominican delight", also known as pan tres leches, is a sponge cake—in some recipes, a butter cake—soaked in three kinds of milk: evaporated milk, condensed milk, and heavy cream. When butter is not used, the Tres Leches is a very light cake, with many air bubbles (according to wikipedia)
You have got to try this eggless tiramisu cake recipe! It is italian. It is mexican because of the tres leches part. And who doesnt love fusion desserts?
It is an easy, no egg recipe!

Measurements -
Eggless Tiramisu tres leches cake
190 g grams curd
130 g castor sugar
1 tsp baking powder
1/2 tsp baking soda
80 g oil
1-2 tsp coffee
1 tbsp rum
165 grams maida
1 tsp vanilla essence
Bake at 170 C for 20-25 minutes
For the milk mixture
1/2 cup mascarpone cheese
1 tsp instant coffee
1/2 cup milk
1/2 cup condensed milk
1 tbsp rum (optional)
For topping -
Mascarpone cheese and whipped cream with some vanilla essence and coffee essence (optional)
Whip up 100 grams cream to stiff peaks (recipe link given below), and fold in 100 grams of mascarpone cheese, 1 tsp vanilla essence and a few drops of coffee esence
Finally dust with cocoa powder.
Set for one to two hours and cut the edges before serving.
