Quick and easy stew peas and rice with chicken Ingredients: One chicken cut into small peaces One can organic black beans low-sodium One can organic red kidney beans low-sodium One can light coconut milk Salt to taste Herbs to Provence All season salt Garlic powder Black pepper All purpose seasoning One onion finely sliced Five cloves of garlic pressed Method: Season chicken with powdered seasoning listed above. Sprinkle seasoning evenly over chicken and rub with both hands until seasoning is rubbed in thoroughly. Heat oil in a pot and add chicken. Allow to brown lightly on all sides. After chicken is nicely brown, add onion and garlic. (Scallion and thyme can be added to) Also add coconut milk and beans. Cook until chicken is soft then add one scotch bonnet pepper for flavor. (Do not cut or burst pepper) Add spinners. (Flour dough) Let spinners cook then serve with rice.
