Prep Time: 40 mins
Cook Time: 15- 20 mins
Servings: 2-3 persons

Ingredients
Chicken – ½ Kg
Basmathi rice – 2 cups (500 grams)
Dry chilli – 6 to 8
Green chilli – 2
Garlic cloves – 10
Ginger – 2 inches
Oil – 3 tbl spoon
Cinnamon stick – 2
Cloves – 6
Cardamom – 2
Ani seeds
Fennel seeds – 1/2tsp
cashew – 6-8
Onion – 2
Mint leaves
Coriander leaves
Tomato – 2
Salt
Curd – 4 tbl spoon
Water – 4 cups
Lemon juice

For marinating chicken
1/2kg chicken , 1/2tsp turmeric , 1/2 chilli powder, 1/2 coriander powder, 1/2 cumin powder,1tsp ginger garlic paste, 2tsp curd, 1/2 lemon squeezed, salt.

Biryani making Method:

1. In a cooker heat oil and add whole spices (cinnamon, clove, bayleaf, fennel seed, cashew, aniseeds , cardamom).
2. Add onion and saute till it turns a brown color.
3. Now add the ginger garlic paste and green chilli sauté it well.
4. Now add red chilli paste mix well. Add mint and coriander leaves.
5. Once raw smell goes and tomato saute it 2mins and add curd.
6. once oil separates add the marinated chicken pieces and mix well the masala.
7. Add the soaked rice and water mix it well.
8. Close and cook for 10 minutes.
9. Cook the rice until 3/4th done add mint leaves and coriander leaves.
10.Now keep it into the dum method. cook in 10 mins at low flame.
11.Turn off the stove and let it rest for 10 minutes.
15. Ambur Biryani is ready. Serve hot with brinjal curry & raita.
