HALOUMI GRAIN SALAD
Bear in mind you will have some leftovers for the next day.
You will need:
⦁ Beetroot (this particular one weighs 450g which is 15.8 ounces)
⦁ 2 cans of brown lentils (drained and rinsed) - each tin is 400g which is 4 ounces
⦁ 1 can of chickpeas - each tin is 400g which is 4 ounces
⦁ 180 grams Halloumi which is 6.3 ounces
⦁ 1 red onion diced
⦁ 2 lebanese cucumbers
⦁ 1 large bunch of mint leaves (about a cup)
⦁ 1 cup of quinoa
⦁ 12 vine ripened cherry tomatoes
⦁ a big bunch of rocket leaves (also known as arugula)
⦁ 1 avocado
⦁ 1.5 tablespoons of olive oil
⦁ 4 tablespoons of fresh lemon juice
⦁ Honey to taste
⦁ Sea salt and freshly ground black pepper
⦁ Lime wedges for garnish
BEETROOT
1. Preheat oven to 200C or 400F and wash the beetroot
2. Wrap beetroot in tin foil (pour a quarter cup of water over it)
3. Roast in oven for 30 - 40 mins
4. Peel the beet once it becomes cool enough to handle
5. Slice up the beetroot.
The extra beetroot slices can be stored for up to one week in the fridge.

PREP THE REMAINING INGREDIENTS
⦁ Cook quinoa
⦁ Drain and rinse chickpeas and lentils
⦁ Dice red onion
⦁ Cut the cherry tomatoes in half
⦁ Cut cucumber into strips or dice them
⦁ Shred mint leaves
⦁ Cut avocado into wedges
⦁ Pat haloumi dry with kitchen paper and cut into 1 cm thick slices and sear for 2 minutes on each side on a non stick plan until golden.
SHAKE THE DRESSING INGREDIENTS UP
(Lemon juice, olive oil, salt and pepper and honey)
Combine lentils, chickpeas, onion, cucumber, tomatoes, mint and salad dressing in a bowl. Season and chill in fridge.
Then, it's just a matter of plating up your salad! Hurrah!
You can adapt this recipe like I did by adding chia seeds, hemp seeds, pumpkin seeds, dried cranberries and poached eggs. Hurrah two salads for the price of one!
