Mezban is a regional feast where people are invited to enjoy a meal with white rice and beef..Mezbani is one of the traditions of Chittagong . “Mezban” is a Persian word which means host . Mezbani means a grand feast arranged by the host to entartain the whole community . This is my humble attempt to try Mezbani style beef .
Ingredients:
Step 1:
মেজবানী মাংসের মসলা তৈরী করতে লাগছে
Coriander Seed ( আস্ত ধনিয়া)1 Tbsp
Cumin seeds( আস্ত জিরা) 1 Tbsp
fennel/ mouri/ sauf ( মিষ্টি জিরা) 1 tsp
Methi/ fenugreek ( মেথি)1 tsp
Radhuni /celery seed( রাঁধুনি) 1 tsp
Yellow Mustard (সাদা সরিষা)1 tsp
Whole Blackpepper ( আস্ত কালো গোলমরিচ)1 tsp
Dry Red Chilli ( শুকনা মরিচ)5/6
Green Cardamom ( সবুজ এলাচ) 6/7
Black Cardamom( কালো এলাচ) 2
Star Anis ( তারা মৌরি)1
Cinnamon ( দারচিনি)2 sticks
Bay Leaves ( তেজপাতা) 3
Clove ( লং)4/5
Nutmeg 1 (জয়ফল) (small pc)
Mace ( জয়িত্রী)1 pc
Step 2 :
মাংস রান্না করতে লাগছে
Beef ( গরুর মাংস) 1.5 kg
Onion Slice( পেঁয়াজ কুচি) 2 cups
Fried Onion( বেরেস্তা) 1 cup
Ginger Paste ( আদা বাটা)2 Tbsp
Garlic Paste( রসুন বাটা) 1&1/2 Tbsp
Turmaric Powder ( হলুদ গুড়া)1 Tbsp
Red Chili powder( লাল মরিচ গুড়া) 1 Tbsp
Pea nut paste ( চিনা বাদাম বাটা)2 Tbsp
Poppy seed paste ( পুস্তদানা বাটা)1 Tbsp
Salt 1 ( লবণ)Tbsp
Tomato (টমেটো) 1 large (chopped)
Mezbani special masala powder(মেজবানি মসলা)
Mustard oil ( সরিষা র তেল)1 cup
Green chili ( কাঁচা মরিচ)5/6
Hot water( গরম পানি) 2 cups

মেজবান মানেই চট্টগ্রাম ।মেজবানের রান্নার রয়েছে আলাদা বিশেষত্ব ।মেজবানি মাংস রান্নার রয়েছে বেশকিছু কৌশল। এই রান্নার আসল বৈশিষ্ট্য হচ্ছে এখানে প্রচুর পরিমাণ মসলা দেওয়া হয়। ঝালও থাকে অনেক। মেজবানি রান্নার আগে বিশেষ মসলার মিশ্রণ তৈরি করে নিতে হবে। অবশ্যই এই রান্না করতে হবে সরিষার তেলে। তবেই পাওয়া যাবে আসল মেজবানি মাংসের স্বাদ। জেনে নিন কীভাবে চট্টগ্রামের ঐতিহ্যবাহী আইটেমটি রান্না করবেন।
