Ingredients:
Alu Bukhara Cake:
• 1 1/2 cup Wheat Flour
• 1 cup Raw Sugar
• 1 tsp Baking Soda
• 1/4 tsp Salt
• 1 cup Milk
• 1 tsp Vanilla Essence
• 1/4 cup Melted Butter
• 4 tbsp Alubukhara Compote
• Few Alubukhara Slices
Cherry Oats Crumble:
• 1 cup Pitted Cherries
• 2 tbsp Raw Sugar / Jaggery
• 1 Cinnamon Stick
• 2 Star Anise
• 2 Cloves
• 1/2 tsp Vanilla
• Zest Of A Lemon
• 1 tsp Oats Flour
Crumble:
• 3 tbsp Oats Flour
• 3 tbsp Coconut Oil
• 3 tbsp Rolled Oats
• 1/2 cup Mix Dry Fruits
• 1/4 cup Mixed Seeds
• 1 tsp Salt
• 1 tbsp Raw Sugar
• A Pinch Of Cinnamon Powder
Method Of Preparation
Alu Bukhara Cake
1. For making a jam like compote, take a pan and add chopped plum/alu bukhara pieces (remove seeds) and some raw sugar.
2. Add cinnamon stick, star anise, cloves and whole black pepper. Cook till it gets turned into a compote like form.
3. Keep it aside for cooling purpose once it is done.
4. Begin to make the batter, take a mixing bowl and add a cup of milk in it.
5. Now put melted butter, vanilla essence, cup of raw sugar and blend it for some time.
6. Now for dry ingredients, take a bowl, add wheat flour and baking soda. Stir it.
7. Add the blended ingredients in this bowl and mix all together.
8. Then add the plum/alu bukhara compote in the bowl containing the other ingredients.
9. Stir it all together with a spoon.
10. Take a cake mould and grease it with some butter.
11. Place slices of plum/alu bukhara beneath in the down layer.
12. Dust some raw sugar over them.
13. Pour a firm layer of the batter made in the cake mould.
14. Tap and Spread it with a spoon. Bake it at 180 degrees Celsius for about 35-40 minutes.
Cherry Oats Crumble
1. In a mixing bowl add oats flour, coconut oil and mix it well.
2. Add rolled oats, mixed dry fruits, mixed seeds, salt to taste, raw sugar, cinnamon powder and stir. Keep it aside.
3. Add some stone spices like star anise, cinnamon stick, cloves and pound these nicely in a mortal pestle.
4. For the cherry mixture, now take a pan and add a cup of pitted cherries (remove seeds), raw sugar and the spices that were pounded.
5.Cook and stir for some time on low flame.
6. Now add oats flour in the pan and cook for another 4-5 minutes.
7. Then pour in some vanilla essence along with lemon zest.
8. Take a small bowl and add the cherry filling first followed by the oats crumble made.
9. Bake at 200 degrees Celsius for about 20-25 minutes.
10. It will turn golden brown and crispy. Ready to Eat.
