Today I am sharing some AWESOME summer meal ideas that are easy to make, healthy and family approved!!! Mary's Channel:
TERIYAKI MARINADE
1 cup water
1⁄4 cup soy sauce
1 tablespoon apple cider vinegar
1/3-1/2 cup packed brown sugar
1 teaspoon freshly grated ginger
1 minced garlic clove
SOUTHWEST CHICKEN WRAPS
2 cups shredded rotisserie chicken
6 whole wheat wraps
2 medium tomatoes, diced
6 mini sweet peppers or 1 red pepper, diced
1 avocado, diced
1-15 oz. can black beans
1 1/2 cups frozen corn
1 head romaine lettuce
Sauce:
1 tablespoon taco seasoning (below)
1 1/2 cups plain Greek yogurt
1/2 lime juiced
Taco Seasoning:
1 tablespoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon sea salt
1/2 teaspoon black pepper
SHRIMP KABOBS WITH ORANGE MUSTARD GLAZE
35-40 raw tail on shrimp, defrosted
10-12 skewers
Glaze:
In a small bowl, stir together 1/4 cup orange marmalade and 1 1/2 teaspoons grainy mustard.
HONEY-LIME CHICKEN ENCHILADAS
Marinade:
6 tablespoons honey
5 tablespoons lime juice
1 tablespoon chili powder
1/2 teaspoon garlic powder
Enchiladas:
1 pound Chicken, cooked and shredded
16 oz. Frontera green enchilada sauce
8-10 Whole Wheat wraps/tortillas
2 cups shredded cheddar cheese
1 cup Greek yogurt
1. Whisk together marinade ingredients and toss with chicken in a zip lock bag.
2. Let chicken mixture marinate for at least 30 minutes but preferably a few hours.
3. Preheat oven to 350 deg.
4 Pour 1/2 cup enchilada sauce on bottom of 9 x 13 baking pan.
5 Fill tortillas with chicken (save marinade), and shredded cheese. Reserve about 1 cup of
the cheese to sprinkle on top.
6. Place rolled tortillas into prepared pan.
7. Mix the remaining enchilada sauce with the Greek yogurt and leftover marinade, and poor
top of enchiladas.
8. Sprinkle with remaining cheese.
9 Bake for 30 minutes, or until brown and crispy on top.
Serves 6-8
