My Vegan "Faux Chicken" Salad
1 cup Cooked Kamut Berries
1/4 - 1/2 cup chopped Walnuts
1/8 - 1/4 cup chopped dried Cherries
1/8 - 1/4 cup chopped Green Onions
1/8 - 1/4 cup finely chopped White or Yellow Onions
1/4 cup of Faux Mayonnaise (optional)

1/4 cup Spring Water
1 teaspoon Agave Syrup
1 tablespoon Grapeseed or Avocado Oil
1/2 teaspoon Sea Salt
1 Tablespoon Onion Powder
Dash of Cayenne Pepper
1/2 - 1 teaspoon dried Basil
Place Cooked Kamut And Walnuts in a processor and pulse together. Add in the spring water and pulse again to a desired texture to resemble a finely processed regular chicken salad texture.
Place this mixture in a bowl and mix in all the remaining ingredients until well incorporated. Taste and adjust seasonings. Enjoy your Faux Chicken Salad spooned over a fresh green salad or in a sandwich. Happy eating! ??
