SUON RAM MAN - CARAMELIZED PORK RIBS
MARINADE
2 lbs pork riblets
3 TBSP minced garlic
3 TBSP fish sauce
1/2 tsp black pepper
ADDITIONAL INGREDIENTS
2 TBSP oil
2 TBSP sugar
1 can coco rico*
1 TBSP fish sauce
Chopped scallion, garnish
*or 12 oz of water or 12 oz chicken stock
1. Cut pork riblets in between the bones. Wash your riblets to preference. I like to soak mine in water + mirin for 5-10 mins to help get rid of any oder. rinse, drain and pat dry pork riblets.
2. Marinate your riblets with all the ingredients listed under MARINADE for 5-10 mins.. just until your done prepping everything else
3. In a wok or skillet, add 2 TBSP oil + 2 TBSP sugar. Cook this so it becomes a nice amber/ dark brown color. (Note: Do not leave this alone as it can burn. Make sure to stir occasionally. You want ur heat on medium low or low. If your sugar starts to bubble/ foams, your heat is too high, turn it down)
4. Once your sugar comes to a nice amber color, add your marinated pork and cook for 3-4 minutes until all the pink on your pork is gone.
5. Once most of the pink is gone, add 1 can coco rico and 1 TBSP fish sauce. Bring this to a boil and reduce heat to simmer— cook for 30-35 minutes. (Note: during this process, make sure to scoop out any foam/ impurities that float to the top)
6. After 30-35 mins simmering, taste test. If you used chicken broth/ water instead of coco rico, you may have to add some more fish sauce or sugar.
7. If everything tastes good to ur preference, crank heat to high and let it cook for 3-5 mins. Your sauce with thicken and reduce— It will also foam/ boil/ bubble. Turn off heat and garnish
7. Enjoy with some rice
