INGREDIENTS for chicken:
* 12 chicken thighs
* 1 tsp thyme
* 1 tsp oregano
* 1/2 tsp smoked paprika
* 1/2 tsp salt or to taste, 1/4 tsp chicken bouillon
* 1/2 tsp crushed black pepper
* 1 tsp minced garlic
* 2 tbsp olive oil
* 2 tbsp ketchup
*** marinade chicken for 60 mins, and bake at 550°F ***
INGREDIENTS for rice:
* 4 cups jasmine rice
* 32 fl oz chicken broth
* 1 tbsp butter
* 1/2 tsp salt or to taste
* 1 tsp minced garlic
* juices from baked chicken
*** bake rice at 350°F for 35 mins ***
INGREDIENTS for mushrooms:
* 3 cups sliced shitake, portobello, or white mushrooms
* 1/2 tbsp unsalted butter
* salt to taste
* pinch of black pepper
* 1/6 cup of chopped parsley
*** garnish with optional chopped parsley before serving ***
*** Optional extra 5 mins baking time after combing all 3 components, to dry rice up if moist rice is not preferred ***
