Thandai keer n Thandai Kulfi Recipe

Ingredients:

For thandak Mixture :

Almond 15 pc
Cashew nuts 12 pc
Pistachios 12 pc
Melon seeds 1.5 Tbsp
Fennel seeds 1 Tbsp
Black paper 1 Tbsp
Cardamom 12 pc
Poppy seeds 1 Tbsp
1 cup milk
Saffron strings 1 pinch
Gulkand 2 Tbsp

For Thandai kheer :

Full fat milk 500 ml
Rice 20 GM
Sugar 100 GM

For Thandai kulfi :

Full fat milk 500 GM
Sugar 100 GM

Procedure :

For Thandai Mixture :

Take a pan/ kadai add nuts – Cashew Nuts , Almonds and Pistachios to do dry roasting with slow to medium flame then add Melon Seeds, Fennel seeds, Whole Black Pepper stir it continuously while roasting it then slower down the flam then add Cardamom seeds Poppy Seeds.

After roasting all nuts n seeds add 1 cup full fat milk n boil it till half the quantity .

Allow it to cool down then make coarse paste by adding saffron strings and Gulkand – our Thandai Mixture is ready , now put it aside.

Thandai Kheer :

Take a pan add 500 ml full fat milk n bring to boil then add soaked rice n stir it then add half portion of Thandai mixture n stir it continuously till it become thick enough.

Add sugar and stir …

Turn off gas and our kheer is ready …

Now pour it into the desired serving cup / bowl and allow it to cool down …

Thandai Kheer is ready to enjoy …

Thandai Kulfi :

Take a pan add 500 ml full fat milk n bring to boil then add remaining half portion of Thandai mixture n stir it continuously till it becomes thick enough.

Add sugar and stir …

Turn off the gas and our Kulfi is ready …

Now pour it into the desired Kulfi Mold then let it set …

Unmold and Enjoy ….
