Our trip to Hunza was great fun and we realled enjoyed cooking in the open. Here is another recipe for you all. "Tandoori Grilled Chicken"
BBQ Chicken
Serves 5-6
Recipe in English:
Ingredients:
-Whole chicken 1 & ½ kg
-Dahi (Yogurt) 3/4 Cup
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Cooking oil ½ tbs
-Lemon juice 2 tbs
-Namak (Salt) 1/4 tsp or to taste
-Tandoori masala 2 tbs
Directions:
Spatchcock Chicken:
-Wash and pat dry whole chicken.Cut tips of the wings.
-Upside down chicken and pat dry again.
-Cut whole chicken with kitchen scissor,cut the back bone of the chicken and break breast bone with knife & flatten it.
-Add deep cuts on chicken with the help of the knife.
-In bowl,add yogurt,ginger garlic paste,cooking oil,lemon juice,salt,tandoori masala and whisk well.
-Add whole chicken and coat well,cover and marinate for 1-2 hours.
-In grill,place marinated chicken and grill on burnt charcoal from both sides until done (approx. 20-25 minutes each side),basting with oil and keep turning sides in between.

-Namak (Salt) 1/4 tsp or to taste
-Tandoori masala 2 tbs
Directions:
Spatchcock Chicken:
-Chicken ko dho ker pat dry ker lein.Wings ka tips ko cut ker lein.
-Chicken ko palat dein aur dubara pat dry karein.
-Kitchen scissor ki madad sa whole chicken ko cut ker lein,back bone ko cut ker lein aur breast bone ko knife ki madad sa break karein & flat ker lein.
-Knife ki madad sa chicken per deep cuts laga lein.
-Bowl mein dahi,adrak lehsan paste,cooking oil,lemon juice,namak aur tandoori masala dal ker ache tarhan whisk ker lein.
-Whole chicken dal ker ache tarhan coat karein aur dhak ker 1-2 hours kliya marinate ker lein.
-Grill per marinated chicken rakh dein aur jaltay hoya koyla mein dono sides sa grill ker lein (approx. 20-25 minutes each side),oil laga lein aur bech bech mein sides change kertay rahein.
