These strawberry espresso martini jello shots are perfect for your Valentine’s Day or Galentine’s get-together.
Here’s What You’ll Need:
Layer 1:
• ¾ cup strong cold brew coffee (or cooled espresso)
• ¼ cup cold water
• 2 packets unflavored gelatin
• ½ cup vanilla vodka
• 2 Tbsp brown sugar syrup
Layer 2:
• ¼ cup cold water
• 1 packet unflavored gelatin
• ½ cup heavy cream
• ¼ cup Baileys Irish Cream
Layer 3:
• ¼ cup cold water
• 1 packet unflavored gelatin
• ⅔ cup heavy cream
• ¼ cup strawberry syrup
• 1½ oz vanilla vodka
For Finishing:
• ¼ cup melted chocolate
• Coffee bean mold

Directions:
Layer 1:
• Add coffee and cold water to a saucepan, sprinkle gelatin over top, and let bloom 5 minutes.
• Heat gently until fully dissolved, then stir in vodka and brown sugar syrup.
• Pour into 2-oz cups, filling each about ½ to ⅔ full (about 15–16 cups), then refrigerate 2 hours until completely set.
Layer 2:
• Add cold water to a saucepan, sprinkle gelatin over top, and let bloom 5 minutes.
• Heat gently until dissolved, whisk in heavy cream and Baileys.
• Let cool about 5 minutes, then gently pour a thin layer over the set espresso base and refrigerate 1 hour until fully set.
Layer 3:
• Add cold water to a saucepan, sprinkle gelatin over top, and let bloom 5 minutes.
• Heat gently until dissolved, whisk in heavy cream, strawberry syrup, and vanilla vodka.
• Let cool about 5 minutes, then gently pour over the white layer and refrigerate at least 2 hours or overnight.
Chocolate Coffee Beans :
• Melt chocolate and pour into a coffee bean mold.
• Refrigerate until fully set, then pop out and place three beans on each jello shot.
