Schezwan Potato Chaat: Ingredients Potatoes 4 cut in wedges and par boiled for 5 mins Oil 2 tbsp + for deep frying Corn flour 4 tbsp Onion ½ cup chopped Garlic crushed 1 tbsp heaped Spring onion 1 chopped Button red chilies 4 Sambal oleak 2 tbsp Soya sauce 1 tbsp Sugar 1 tbsp Salt 1 tsp Vinegar 1 tbsp Sweet chili sauce 3 tbsp Chili garlic sauce 2 tbsp Siracha sauce 2 tbsp METHOD Make thick wedges for potatoes, par boil for 5 mins, drain and cool, dust them with 3 tbsp corn flour, deep fry for 5 mins till golden and crisp, remove. Heat 2 tbsp oil in a wok, add button red chilies, chopped onion, crushed garlic, fry for 2 mins, add in sambal oleak with ¼ cup water, all the sauces, sugar, salt, stir for 2 mins, add fried potatoes, mix well, thicken mixture with corn flour paste, serve garnished with spring onions finely chopped. Fried Prawns: Ingredients Fried prawns 1 packet Oil for frying Method In a wok heat oil and fry the fried prawns. Lastly serve hot.
