Smoky BBQ Potato Skewers
These smoky BBQ potato skewers are perfect as a snack or a side dish. You can make them on the grill or in the oven and with only 5 main ingredients!
Main Ingredients
680 g (about 1.5 lbs) small potatoes, halved
2 tablespoons BBQ sauce
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
2 red bell peppers, cut into chunks
Basic Pantry Ingredients
3 Tbsp olive oil
1 Tbsp salt, or more to taste
pepper, to taste
Directions
1. Preheat Grill or Oven: If using a grill, preheat to medium-high heat. If using an oven, preheat to 200°C (400°F).
2. Boil Potatoes: Boil the potato halves in water with 1 Tbsp of salt until just tender, about 8-10 minutes. Drain well.
3. Season Potatoes: In a large bowl, mix the boiled potatoes with olive oil, BBQ sauce, smoked paprika, garlic powder, salt, and pepper.
4. Assemble Skewers: Thread the potatoes and red bell pepper chunks alternately onto skewers.
5. Cook Skewers: Grill or bake the skewers for about 20 minutes, turning occasionally, until the potatoes are crispy on the outside.
