#bbq #oktoberfestrecipes #porkshank #porkrecipes #meat #cooking Ingredients: -4 each hind leg Pork Shanks -2 tbl Duce's Wild Original Mustard (as a binder) -1/2 cup Duce's Wild Original Rub -1/2 cup Salt, Pepper, Garlic Rub -2 cups Duce's Wild Competition Sauce (for glaze) -1 cup Brown Sugar -1/2 stick of Butter -1 cup Apple Juice Method: -Preheat Smoker: Prepare your smoker to run at 250°F, using hickory wood for smoke. -Apply Binder: Generously rub each pork shank with Duce's Wild Original Mustard to act as a binder. -Season: Layer on the Duce's Wild Original Rub followed by the Salt, Pepper, Garlic Rub. Make sure the shanks are evenly coated. -Smoke Shanks: Place the seasoned shanks in the preheated smoker. Smoke them for about 5-6 hours or until they reach an internal temperature of 175°F.- -Wrap: Once the internal temperature is reached, remove the shanks from the smoker. Lay each on a piece of aluminum foil. -Season in Foil: Inside the foil, season the shank with apple juice, brown sugar, and a slice of butter. -Return to Smoker: Place the foil-wrapped shanks back into the smoker. Continue cooking for about 1 hour or until an internal temperature of 200-205°F is reached. -Prepare Sauce: Remove shanks from foil and reserve the liquid. Add this liquid to the Duce's Wild Competition Sauce. -Glaze: Generously glaze each shank with the enriched Duce's Wild Competition Sauce. -Tack Up the Sauce: Return the glazed shanks to the smoker briefly just to tack up the sauce. -Serve: Serve your delicious smoked pork shanks alongside traditional German sides for a complete Oktoberfest feast. Duce's Wild Original Mustard makes an excellent dipping sauce.
