Smoked Chicken Salad. A fresh Summer Salad
Summer is coming and in summertime we want to eat light and refreshing food.
This Smoked Chicken Salad will satisfy your tastebuds in every way.
Serves 4.
Ingredients:
2 smoked chicken breasts
1 small cucumber
4 hard boiled eggs
1 large red bell pepper
5 spring onions
Small can of corn (kernels)
Mayonnaise to taste (replace with low fat yoghurt for healthier option)
Salt and pepper.
Instructions:
Cut all the ingredients in small cubes.
Mix everything together in a bowl.
Add mayonnaise, salt and pepper to taste.
Mix everything well.
