Salmon, coconut rice & beans & salad recipe


*Excuse peppa pig at the beginning haha* ______ Hey guys this dish was inspired by a meal I ate in a Caribbean restaurant local to me and I remade it with my own twist. I hope you guys try it out and enjoy this video. ______ Ingredients needed: For the rice: Olive oil 1 large onion - Chopped 1 garlic clove - Chopped 2-3 fresh sprigs of thyme 170g basmati rice - Rinsed 1 tin coconut milk - Boiled - With a vegetable stock cube mixed in 1 tin aduki beans - Rinsed Salt, pepper to taste & 1 tsp all spice 4 salmon fillets - Washed Seasoning for salmon: 1 tsp: Garlic powder Chilli powder Onion powder Coriander powder Nutmeg powder All spice Salt & pepper Olive oil Salad: 1 large handful of spinach 1 handful cherry tomatoes Half a cucumber Lettuce 1 red pointed pepper 2 spring onions Small bunch of coriander (can use parsley instead if you dont like coriander) Half juice of lemon 1 tsp salt Good glug of extra virgin olive oil. ______ If you do make this please tag me on Instagram and give me a follow @eattravelinspire.
