Summer Watermelon Salad Recipe
Ingredients:
Dressing:
1 piece ginger, 1-inch, peeled and grated
2 tablespoons kikkoman soya sauce
2 green chillies, fresh, mild, deseeded and julienned
6 tablespoons extra virgin olive oil
1 tablespoon lime juice
1 teaspoon chinese sesame oil
½ teaspoon black pepper powder
½ teaspoon salt, or to taste
1 bunch mixed salad leaves
1 handful rocket (arugula) leaves
¼ medium watermelon, peeled, cut into 1-inch cubes, chilled in the refrigerator
1 small handful mint leaves, fresh
1 small handful coriander leaves, fresh
½ cup roasted peanuts, unsalted, roughly crushed
125 grams feta cheese
