In this recipe, the chicken drumsticks are smeared with a spice-mix of a number of spices, namely, coriander seeds, nigella seeds, cumin seeds, mustard seeds, dry chillies etc. and then cooked on a grill with ghee and mustard oil.
00:25- Preparation of the Spice-Mix
2 Dry Red Chillies
1 tbsp Cumin Seeds
1/4 tsp Nigella Seeds
1 tsp Mustard Seeds
1 tbsp Coriander Seeds
1 tsp Fennel Seeds
1 tsp Black Peppercorns
1/4 tsp Fenugreek Seeds
01:04- Preparation of the Marinade
4 Chicken Drumsticks
1 tsp Turmeric Powder
1 tbsp Red Chilli Powder
1 tbsp Lemon Juice
1 & 1/2 tbsp Ginger-Garlic Paste
2-3 tbsp Curd
2 tbsp Chickpea Flour (roasted)
Salt (as required)
2 tbsp Pickle Purée
1 tbsp Mustard Oil
02:40- Grilling the Chicken
2 tbsp Mustard Oil
Ghee (for basting)
Coriander Leaves (chopped)
